Anyone else out there wish you could just raise the white 'surrender' flag every once and awhile and take a break? That was what tonight's dinner was all about. A simple, comforting, delicious stew that took about 20 minutes to make, but tasted like it had been simmering on the stovetop all day.
God has blessed me with a husband who is not picky and really is okay with just about anything I make. The downside is that the answer to the question, "Sweetie, what would you like for dinner?" is almost always "I'm good with anything". While freedom to create 'at will' is really nice, a little direction every once in awhile is appreciated. So today I forwarded a link from Real Simple with 10 chicken recipes and told him to pick one for us to have tonight for dinner. He chose Bean and Chicken Sausage Stew.
Wow. It was amazing. Hearty, healthy, delicious and filling without being too heavy. The ultimate weeknight dinner.

That's an awesome recipe. I've made it a few times after a friend showed it to me recently. I love how it's so easy but still healthy and tasty.
