And I Don't Even Really Like Sausage...

It's cold (for the Houston area) and wet outside.  We're experiencing the kind of weather that makes you want to curl up with your Kindle and a cup of coffee under a warm blanket and just shut the rest of the world out. Unfortunately that is not my reality.  There are still errands to run, clothes to fold, meals to prepare and papers to grade.  In short, life goes on, even when I would rather it not.


Anyone else out there wish you could just raise the white 'surrender' flag every once and awhile and take a break?    That was what tonight's dinner was all about.  A simple, comforting, delicious stew that took about 20 minutes to make, but tasted like it had been simmering on the stovetop all day. 


The Hubs actually picked out this recipe...and took the photos. 

God has blessed me with a husband who is not picky and really is okay with just about anything I make.  The downside is that the answer to the question, "Sweetie, what would you like for dinner?" is almost always "I'm good with anything".  While freedom to create 'at will' is really nice, a little direction every once in awhile is appreciated.  So today I forwarded a link from Real Simple with 10 chicken recipes and told him to pick one for us to have tonight for dinner.  He chose Bean and Chicken Sausage Stew

Wow.  It was amazing.  Hearty, healthy, delicious and filling without being too heavy.  The ultimate weeknight dinner.

That's an awesome recipe. I've made it a few times after a friend showed it to me recently. I love how it's so easy but still healthy and tasty.
